140g smoked salmon
5 eggs, cracked into a bowl
2 sesame seed bagels, halved
1 avocado, peeled and sliced
a few sprigs of fresh dill
1. Add the eggs to a small nonstick sauce pan and bring up to a very low heat. With a wooden spoon stir firmly to break the yokes until they emulsify with the whites. Continue to stir in a figure 8 motion for 5 - 8 minutes until the eggs become silky soft and glisten. Season to taste with salt and cracked black pepper.
Toast the bagels and spoon a generous amount of scrambled eggs on top, followed by layers of smoked salmon, avocado and sprigs of fresh dill. Finish with some cracked black pepper.
Avocados are incredibly delicious and go with all sorts of foods. They are among one of the most nutritious of fruits providing a great source of vitamins C, E, K, and B-6, as well as magnesium, potassium and omega-3 fatty acids.
