Time - 30 minutes
100g short grain rice
400ml almond milk
100ml coconut cream
6 dates, pitted
1 banana, peeled
1 tbsp sesame seeds
1 tsp honey
1. Add the rice and almond milk into a cold sauce pan. Gently turn up the heat and bring to a low simmer. Place a lid on and cook for 25mins (stir intermittently to prevent the rice from sticking to the bottom of the pan) until the rice has absorbed most of the almond milk and is soft all the way through.
2. Once the rice is cooked, add the coconut cream, dates, sesame seeds, honey and the rice to a food processor (or blender) and pulse until all the ingredients are fully incorporated.
Divide into bowls and serve warm or at room temperature.
