BalletFriends Nutrition - Tuna Sandwich

Serves 2

Time: 10 minutes

Ingredients 


200g of jared tuna steak, drained
2 fresh spring onions, diced
1 yellow pepper, seeded and diced
8 baby tomatoes, quartered
4 large fresh basil leafs, rolled and sliced
2 tsp whole grain mustard
1 tbsp natural yogurt
3 tbsp of tinned sweet corn, drained
half a tin of cooked kidney beens, rinsed
handful of watercress, washed
whole grain bread, thickly sliced

Method


1. In a large bowl, combine all the ingredients (except the bread) and mix thoroughly.

2. Place a large helping of the tuna mix on sliced bread and top with watercress, followed by another slice of bread.

To serve

Enjoy with some crunchy vegetable crisps.
