Overnight Muesli

BalletFriends Nutrition - Muesli

Type: Breakfast
Serves 2
Time: 5 minutes, plus overnight soaking
 
Ingredients
180g rolled oats
300ml almond milk (and some extra when serving in the morning)
200ml canned coconut cream
1 tbsp of honey
1 tsp of vanilla extract or essence
2 tbsp chia seeds
2 tbsp pumpkin seeds
1 handful of sultanas
dried fruits and seeds of choice - we use:
1 tablespoon almond flakes, madjool dates, dried apricots, diced dried figs

Method

1. Add the oats, chia seeds, sultanas, pumpkin seeds, almond milk, coconut cream, honey and vanilla extract to a large food container and mix thoroughly.
2. Cover with a lid or clean tea towel and place in a refrigerator overnight.

To serve

Loosen the mixture to desired consistency with a drizzle of almond milk and spoon into cereal bowls. Scatter across your choice of dried fruits, seeds or nuts followed by a teaspoon of runny honey.


Nutritional Note:
Breakfast plays an important role in general wellness and rolled oats are a great way to start the day by supplying a source of carbohydrates, fibre, vitamins and minerals. Overnight Muesli will keep refrigerated in an airtight container for up to three days.
